Apply CHEF'S CHOICE full strength and allow to remain on surface for 20 to 30 minutes, or until deposits have softened. Scrap off heavy deposits with brush or spatula. Rinse surfaces thoroughly with potable water and dry. If accumulation of grease is excessive, repeat procedure.
GRIDDLES: Heat plate to 80˚ C (145˚ F) before cleaning shut off. Mix 1:1 with water apply directly on the hot surface. Allow to act for 5 to 10 minutes or until deposits are softened. Scrape excess greasy solution with spatula or stiff brush and rinse grill thoroughly with potable water. Repeat if necessary. Wipe dry. Apply cooking oil on the grill immediately after cleaning.
DEEP FRYER: Empty and scrape or hose down any excess grease. Fill fryer to 10 cm (4?) from the top with water. Add 1 part cleaner per 25-40 parts water in the deep fryer. Heat cleaning solution to nearly boiling until fryer surfaces are clean. Drain and flush off using hot water. Rinse with potable water.
